Flourless Chocolate Cake

Ingredients:

  • 200g dark chocolate (70% cocoa solids)
  • 150g unsalted butter
  • 150g granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Cocoa powder (for dusting)

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a round cake pan.
  2. Melt the chocolate and butter in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a separate bowl, whisk together the sugar, eggs, vanilla extract, and salt until well combined.
  4. Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously until fully incorporated.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for approximately 25-30 minutes or until the cake is set with a slightly cracked top.
  7. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Raspberry Almond Bars

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup gluten-free rolled oats
  • ¼ cup coconut flour
  • ½ cup coconut oil, melted
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup raspberry jam (preferably all-fruit)

  6. Bake for about 25-30 minutes or until the top is golden brown.
  7. Remove from the oven and let it cool completely in the baking dish before cutting into bars.
